Bison & Refried Bean Pizza
BISON & REFRIED BEAN PIZZA

1 tube Grands corn meal biscuits 1 16-oz. can refried beans
1 pound ground Bison 1 ½ cup shredded cheddar cheese
3/4 cup water 1 cup shredded lettuce
4 ounces chopped, canned green chilies 2 medium tomatoes, chopped
1 envelope taco seasoning 1 medium onion, chopped
Flatten biscuits onto bottom and up the sides of a greased 12-in. pizza pan, making sure to pinch together (no holes!). Bake in 400o over for 10 minutes or until edges are lightly browned. Cool. Meanwhile, brown Bison lightly. Add water, chilies and taco seasoning and boil gently for 5 minutes. Spread beans over biscuit crust. Top with the Bison mixture. Sprinkle with cheese and bake for 10 minutes or until cheese is melted and crust is golden. Top with lettuce, tomato and onion. Serves 4 to 6.
Buffalo Chili
1 pound ground bison 1 32 oz. can crushed or whole tomatoes
1 medium onion, chopped 1 ½ tablespoons hot Mexican chili powder
½ green pepper, chopped 1 teaspoon salt
2 cloves garlic, chopped fine
1 15 oz. can black or pinto beans
1 6 oz. can tomato paste
Lightly brown ground bison meat with onions, peppers, and garlic. Add tomato paste, tomatoes, drained beans and chili powder. Cook on very low temperature for 45 minute.. Serve plain or topped with sour cream and grated cheese. Serves 4 to 5
Can be made milder or hotter by adjusting the amount and type of chili powder. Can be made thicker or thinner by adjusting the amount of tomatoes.
